Wow, what a blazing hot weekend it was!! Saturday we had a family reunion to go to and it was soooo hot!! It was really nice to see all of my relatives. Some are doing well, some aren't and some just never change! For my family this has been an annual event for at least the last 15 years. I actually had a cousin that came up to me as he was leaving and said "This was fun, we should do this more often." WHAT!?!?! Hello!! We do this every year! Where have you been? Oh well, better late than never I guess.

Yesterday was so hot and humid that I stayed inside in the air conditioning and did nothing but look at recipes online, facebook, pogo & watched Rocky V with my son, Jon. Later, I did venture out to go grocery shopping. WooHoo!

Today is just as hot (90's) and humid. Feels like a jungle out there. Fortunately I'm inside working in the AC and keeping cool. My son, Matthew, had a job interview this morning at Wegman's. Hopefully, he will be starting in a couple of weeks. He's very excited to get started on his 1st job and making some cash.

So here's a pic of my kids. Jon is the youngest, he's 12 and full of P&V (if you know what I mean). Matt is my 16 yr old. He just got his permit, so we are going through some very fun times with him. Tina is 19 and off to Niagara University for her sophomore year.

They keep me busy and my life is full of laughter with them around. They are the loves of my life!

Side of pasta please?

So why is it whenever I try to find something to cook that is different, new and exciting and low cal/low fat/low taste, I always end up fixing the same old stuff? It's so frustrating! I just spent 2 hours online looking for a pasta side dish that consists of things that I have in my pantry and came away with nothing. I just wanted something light, tasty and colorful to go with my grilled chicken. Grrr!!! No wonder people give up on their diets!!!

So to add insult to injury, I forgot to take the chicken out of the freezer. Okay, no prob - done it a thousand times before. I go to do the quick thaw - and instead of putting it into the micro I decide to do it in the sink under running cool water. Still no prob!! Well some well meaning imbecile decided to enhance the pad that they put under the chicken that soaks up all of the juice! Not a wise choice!! I couldn't get it off and in my impatience it rips. Previously this wouldn't have been a problem, today, however, I get what appears to be the inside of a diaper disintegrating in my sink! Paper shreds and gelatinous stuff all over!! WTH!!!

The heck with the diet! Where's the chocolate?!?!
